The Sanger Estate Olive Grove
The Sanger Estate Vineyard and Olive Farm is the only olive grove in the United States exclusively planted to the Lucca variety. Our 1,700 trees are planted on 11 acres and have been producing high quality olives for more than a decade.
The choice of Lucca is no coincidence; it thrives in the Central Coast climate, particularly in the temperate embrace of the Santa Ynez Valley. Not only does it boast a bold peppery flavor, but the trees yield olives abundant in oil for their size, making them ideal for the creation of our exceptional olive oil.
The journey from tree to bottle unfolds at Figueroa Farms in the heart of the Santa Ynez Valley. Here, our olives are expertly milled, transforming into a paste that undergoes meticulous malaxation – the art of blending. A centrifuge then works its magic, separating the oil from the solids, followed by careful filtration and a serene resting period in barrels for clarity.
